Alpine Roasted | Gaoshan Kao | 高山烤
This pure green roasted alpine tea engenders a woody and nutty flavour, reminiscent of coffee, with a slight honey aroma. This tea is less astringent than pure green tea, and contains a lower level of caffeine. Its green colour is lovely and very rich, with a clear liquor. It is grown and processed in Kiewa Valley, Australia.

This tea is named because of its unprocessed fresh tea leaves, which are almost completely jade white in colour. These turn yellow after brewing. The tea itself is actually a green tea rich in amino acids. It has a comparatively high umami taste among green teas.

This tea is grown in plantations which also grow fragrant fruit trees in amongst the camellia sinensis plants. Add tea to the water, rather than vice-versa.

Like matcha, it is shaded with bamboo mats before harvest, increasing the chlorophyll content of the tea. This incurs extra labour costs, but also produces extremely high-quality tea.

Originating around 1920, hōjicha leaves are a deep brown colour, and often have a flakey appearance. It brews dark brown, and can have a smoky character. The aroma of dark-roasted hōjicha can be remarkably similar to the aroma of coffee, although it does have a definitively milder flavour.

The most famous green tea in China. Very distinct shape: Smooth, perfectly flattened along the side, achieved by highly skilled shaping in a hot wok. This technique has been perfected by tea masters over many centuries. The tea is mostly handmade and gives an inviting, vegetal and toasty aroma.
Lu'an Melon Seed | Lu'an Gua Pian | 六安瓜片
One of China’s top ten famous teas. Lu’an Gua Pian is the only type of green tea made from the unprocessed fresh leaves, with no buds or stems. Only single large tea leaves are picked, making the taste of the tea quite strong in comparison to other green teas.

A celebrated traditional Japanese tea that is the heart of the Japanese tea ceremony. Several weeks prior to spring harvest, plants are covered with bamboo mats to reduce exposure to the sun. This increases the chlorophyll content and turns the leaves dark green, giving matcha its distinct colour.
