Ground spices
Ground spices have been milled to produce a powder. These spices are easy to use and compact to store, making them the preferred choice in many kitchen cupboards. They’re also highly concentrated, and when fresh their potency packs a serious punch.
This means you have to be careful when adding them, and especially when substituting them for whole spices. Something to note: ground spices can change the colour of a dish. You should be careful when adding them to a dish that needs to be a certain colour, or have a clear liquid.
Whole spices
Whole spices are more versatile and can be subject to a wide variety of cooking techniques, including grinding to various sizes, blooming, grating, toasting, and cracking.
In many recipes, whole spices are preferred because of their freshness, texture, ability to make more subtle infusions, and for the fact that they can be used with and enhanced by so many different cooking techniques.
Whole spices are often less potent than their freshly ground counterparts, but offer a subtle and well-rounded flavour experience.
