This style of green tea is becoming harder and harder to source due to its processing style, as it is hand roasted in a pan over low heat. This is classed as a green tea. It is made using the Da Bai varietal of Fuding Country. The ‘snow’ portion of its name is due to the downy like appearance that cover the leaf and make it appear white in colour.
This tea is harvested early in the spring and the very best lots are often picked mid-march. This tea is not widely sold outside of China. You will note the sweet, vegetal and with no astringency flavour.
Steep for 3 -4 minutes at 85C.
